Creamy Tuscan Chicken Pasta

When I need dinner fast, this Creamy Tuscan Chicken Pasta saves the day. It’s creamy, garlicky, and loaded with spinach and sun-dried tomatoes for that “restaurant” feel at home. Use cooked chicken and cooked pasta and it’s ready in about 15 minutes.

Ingredients
  

Main
  • 2 cups cooked pasta penne or rotini
  • 2 cups cooked chicken sliced or shredded
  • 1 tbsp olive oil
  • 3 cloves garlic minced
Sauce
  • 3/4 cup heavy cream or half-and-half
  • 1/2 cup chicken broth
  • 1/3 cup sun-dried tomatoes chopped
  • 2 cups spinach packed
  • 1/3 cup parmesan grated
  • 1/2 tsp salt to taste
  • 1/4 tsp black pepper to taste

Equipment

  • Large skillet

Method
 

  1. Heat olive oil in a large skillet over medium heat. Add garlic and cook 30 seconds.
  2. Add cream and broth. Simmer 2–3 minutes.
  3. Stir in sun-dried tomatoes, spinach, and parmesan. Cook until spinach wilts and sauce thickens.
  4. Add cooked chicken and pasta. Toss 1–2 minutes until heated through. Serve.

Notes

Notes:
Use rotisserie chicken and pre-cooked pasta for the true 15-minute version.
