Sheet Pan Garlic Chicken & Veggies

This Sheet Pan Garlic Chicken & Veggies is my go-to healthy meal when I don’t want a sink full of dishes. Everything roasts together on one pan, and the garlic seasoning makes it so flavorful. It’s perfect for weeknights and easy to customize with whatever veggies you have.

Ingredients
  

Main
  • 1.5 lb chicken thighs boneless skinless
  • 2 cups broccoli florets
  • 1 bell pepper sliced
  • 1 zucchini sliced
Seasoning
  • 2 tbsp olive oil
  • 3 cloves garlic minced
  • 1 tsp paprika
  • 1 tsp Italian seasoning
  • 3/4 tsp salt to taste
  • 1/4 tsp black pepper to taste
Finish
  • 1 tbsp lemon juice optional

Equipment

  • Baking sheet
  • Mixing bowl

Method
 

  1. Preheat oven to 425°F (220°C). Line a baking sheet with parchment.
  2. Toss chicken and veggies with olive oil, garlic, paprika, Italian seasoning, salt, and pepper.
  3. Spread everything on the sheet pan in an even layer.
  4. Bake 18–22 minutes, stirring once, until chicken is cooked through and veggies are tender.
  5. Finish with lemon juice if using. Serve warm.

Notes:
Swap veggies with cauliflower, carrots, or green beans. Add chili flakes for heat.
