- Cook the chopped bacon in a large skillet over medium heat until crisp. Transfer to a plate with a slotted spoon.
- Add the gnocchi to the skillet and cook for 2 to 3 minutes, stirring occasionally, until lightly golden.
- Stir in the corn and garlic and cook for 1 minute.
- Add the heavy cream and Parmesan and stir until the sauce is smooth and lightly thickened.
- Return the bacon to the skillet and finish with black pepper. Serve warm.
Notes
Tip: Add a splash of broth if the sauce becomes too thick.
