Ingredients
  

Skillet
  • 16 ounces potato gnocchi
  • 4 bacon slices chopped
  • 1 cup corn kernels fresh or frozen
  • 2 garlic cloves minced
  • 3/4 cup heavy cream
  • 1/2 cup grated Parmesan plus more for serving
  • 1/4 teaspoon black pepper

  • Slotted spoon

Method
 

  1. Cook the chopped bacon in a large skillet over medium heat until crisp. Transfer to a plate with a slotted spoon.
  2. Add the gnocchi to the skillet and cook for 2 to 3 minutes, stirring occasionally, until lightly golden.
  3. Stir in the corn and garlic and cook for 1 minute.
  4. Add the heavy cream and Parmesan and stir until the sauce is smooth and lightly thickened.
  5. Return the bacon to the skillet and finish with black pepper. Serve warm.

Notes

Tip: Add a splash of broth if the sauce becomes too thick.
