Ingredients
  

Ramen
  • 3 cup low-sodium chicken broth or vegetable broth
  • 2 tbsp white miso paste
  • 1 tbsp soy sauce add more to taste
  • 1 tsp toasted sesame oil
  • 2 pack ramen noodles discard seasoning packets
  • 2 cup baby spinach packed
Mushrooms + Toppings
  • 1 tbsp olive oil
  • 8 oz cremini mushrooms sliced
  • 2 clove garlic minced
  • 2 green onions sliced
  • 1 tsp sesame seeds optional
  • 1 tbsp chili oil optional

Equipment

  • Medium pot
  • Skillet

Method
 

  1. Bring broth to a gentle simmer in a medium pot.
  2. Meanwhile, heat olive oil in a skillet over medium-high heat. Add mushrooms and cook 4–5 minutes until browned.
  3. Add garlic to the mushrooms and cook 30 seconds until fragrant. Turn off heat.
  4. Add ramen noodles to the simmering broth and cook 2–3 minutes (or until tender).
  5. Reduce heat to low. In a small bowl, whisk miso with a few spoonfuls of hot broth until smooth, then stir it into the pot.
  6. Stir in soy sauce and sesame oil. Add spinach and cook 30–60 seconds until just wilted.
  7. Serve ramen in bowls and top with sautéed mushrooms, green onions, sesame seeds, and chili oil if using.

Notes

Tip: Keep the heat low when adding miso—boiling it can dull the flavor. Whisk it with hot broth first so it dissolves smoothly.
