- Heat a large skillet over medium-high. Cook ground turkey until browned, breaking it up as it cooks (add olive oil if needed).
- Add garlic and ginger and cook 30 seconds until fragrant.
- Stir in coleslaw mix and cook 3–4 minutes until slightly softened but still a bit crunchy.
- In a small bowl, whisk soy sauce, rice vinegar, honey, and sesame oil. Pour into the skillet and toss until glossy.
- Turn off heat. Top with green onions and sesame seeds. Add sriracha if using and serve.
Notes
Tip: For extra crunch, keep the cabbage slightly undercooked. Serve over rice or cauliflower rice if you want it more filling.
