Ingredients
  

Skillet
  • 1 lb ground turkey
  • 1 tbsp olive oil if needed for lean turkey
  • 3 cups coleslaw mix cabbage + carrots
  • 3 cloves garlic minced
  • 1 tbsp fresh ginger grated
Sauce
  • 3 tbsp soy sauce low-sodium
  • 1 tbsp rice vinegar
  • 2 tsp honey or brown sugar
  • 1 tsp toasted sesame oil finish to taste
Finish
  • 2 whole green onions sliced
  • 1 tbsp sesame seeds
  • 1 tsp sriracha optional, for heat

Method
 

  1. Heat a large skillet over medium-high. Cook ground turkey until browned, breaking it up as it cooks (add olive oil if needed).
  2. Add garlic and ginger and cook 30 seconds until fragrant.
  3. Stir in coleslaw mix and cook 3–4 minutes until slightly softened but still a bit crunchy.
  4. In a small bowl, whisk soy sauce, rice vinegar, honey, and sesame oil. Pour into the skillet and toss until glossy.
  5. Turn off heat. Top with green onions and sesame seeds. Add sriracha if using and serve.

Notes

Tip: For extra crunch, keep the cabbage slightly undercooked. Serve over rice or cauliflower rice if you want it more filling.
