Course: Lunch

Ingredients

Filling
  • 1 can tuna drained
  • 2 tbsp mayonnaise or Greek yogurt
  • 1 tsp Dijon mustard optional
  • 2 tbsp celery finely chopped (optional)
  • 1 tbsp pickles chopped (optional)
  • 1/4 tsp salt to taste
  • 1/8 tsp black pepper to taste
Quesadillas
  • 2 large tortillas
  • 1 cup shredded cheese cheddar or mozzarella
  • 1 tsp butter or oil for the pan

Equipment

  • Skillet
  • Spatula

Method

  1. Mix tuna, mayo, mustard (optional), celery/pickles (optional), salt, and pepper.
  2. Heat a skillet over medium heat and lightly grease with butter or oil.
  3. Place one tortilla in the skillet. Sprinkle half the cheese, spread tuna mixture, add remaining cheese, then top with the second tortilla.
  4. Cook 3–4 minutes per side until golden and the cheese melts. Slice and serve.

Notes

Notes:
Keep heat at medium so the tortilla browns before the cheese burns. Add tomato slices after cooking for a classic “tuna melt” vibe.
