Ingredients
  

Toast
  • 2 slices sourdough bread or thick whole-grain bread
  • 1 ripe avocado
  • 1 tsp lemon juice
  • 1/4 tsp kosher salt to taste
  • 1/8 tsp black pepper to taste
  • 6 cherry tomatoes halved
  • 2 oz fresh mozzarella sliced or pearls
  • 6 fresh basil leaves torn
  • 2 tsp balsamic glaze to drizzle
  • 1/8 tsp red pepper flakes optional

Method
 

  1. Toast bread until golden and crisp.
  2. Mash avocado with lemon juice, salt, and pepper.
  3. Spread avocado on toast and top with tomatoes and mozzarella.
  4. Finish with basil and a drizzle of balsamic glaze. Add red pepper flakes if desired.

Notes

Tip: Toast the bread well so it doesn’t get soggy.
Swap: Feta or goat cheese works if you don’t have mozzarella.
