Ingredients
  

Stir-Fry
  • 2 packs ramen noodles seasoning packets discarded
  • 2 cups bagged slaw mix or shredded cabbage + carrots
  • 1 tbsp olive oil
  • 2 cloves garlic minced
Sauce
  • 3 tbsp soy sauce
  • 1 tbsp honey
  • 1 tsp sesame oil
  • 1 tsp rice vinegar or lime juice
  • 1 tbsp sesame seeds for topping
  • 2 tbsp green onions sliced

Method
 

  1. Cook ramen noodles in boiling water for 2 to 3 minutes, until just tender. Drain well.
  2. Whisk soy sauce, honey, sesame oil, and rice vinegar in a small bowl.
  3. Heat olive oil in a large skillet over high heat and sauté slaw mix for 2 minutes.
  4. Add garlic and cook 20 seconds.
  5. Add drained noodles and pour in the sauce. Toss until glossy and coated, about 1 minute.
  6. Top with sesame seeds and green onions and serve immediately.

Notes

Tip: Keep noodles slightly undercooked so they stay springy after tossing in the hot skillet.
