Ingredients
  

Oatmeal Cups
  • 2 cup rolled oats old-fashioned
  • 1 tsp baking powder
  • 1 tsp ground cinnamon
  • 1 pinch salt
  • 2 large eggs
  • 1 1/2 cup milk any kind
  • 1/4 cup maple syrup
  • 1 tsp vanilla extract
  • 1 1/2 cup mixed berries fresh or frozen
Optional Drizzle
  • 3 tbsp almond butter warm slightly to drizzle

Method
 

  1. Preheat oven to 350°F. Grease a 12-cup muffin tin.
  2. Whisk eggs, milk, maple syrup, and vanilla in a bowl.
  3. Stir in oats, baking powder, cinnamon, and salt. Fold in berries.
  4. Scoop mixture evenly into muffin cups. Bake 18–22 minutes until set.
  5. Cool 10 minutes, then drizzle with almond butter if using.

Notes

Tip: Freeze cooled cups in a bag and reheat for a fast grab-and-go breakfast.
