Ingredients
  

Buffalo Bean Filling
  • 2 15-oz cans white beans drained and rinsed
  • 1/4 cup buffalo sauce
  • 2 tbsp Greek yogurt
  • 1/2 tsp garlic powder
  • 1/4 tsp black pepper
Wraps
  • 4 large flour tortillas
  • 3 cups romaine lettuce shredded
  • 1/4 cup Parmesan cheese grated
Caesar Yogurt Dressing
  • 1/3 cup Greek yogurt
  • 1 tbsp lemon juice
  • 2 tbsp Parmesan cheese
  • 1 small garlic clove grated
  • 1/8 tsp black pepper

Equipment

  • Mixing bowl
  • Fork or potato masher
  • Small bowl

Method
 

  1. Add the white beans to a bowl and mash them lightly with a fork, leaving some texture.
  2. Stir in the buffalo sauce, 2 tablespoons yogurt, garlic powder, and black pepper until combined.
  3. In a small bowl, whisk the dressing ingredients until smooth and creamy.
  4. Warm the tortillas for a few seconds so they are soft and flexible.
  5. Divide the romaine between the tortillas, then top with the buffalo bean filling.
  6. Drizzle with the Caesar yogurt dressing and sprinkle with Parmesan.
  7. Fold in the sides, roll tightly, and slice each wrap in half before serving.

Notes

Tip: Pack the dressing separately if making these ahead so the wraps stay crisp until lunchtime.
