  • 2 cups cooked rice
  • 2 cups cooked chicken shredded
  • 3 cups green cabbage thinly shredded
  • 1 cup shredded carrots
  • 1 English cucumber thinly sliced
  • 2 green onions sliced
  • 1 tablespoon sesame seeds
Sesame Lime Dressing
  • 2 tablespoons lime juice
  • 1 tablespoon toasted sesame oil
  • 1 1/2 tablespoons low-sodium soy sauce
  • 1 tablespoon honey
  • 1 garlic clove minced

Method
 

  1. In a small bowl, whisk together the lime juice, toasted sesame oil, soy sauce, honey, and minced garlic.
  2. Divide the cooked rice among 4 bowls.
  3. Top with shredded chicken, cabbage, carrots, and cucumber.
  4. Drizzle the sesame lime dressing over the bowls.
  5. Finish with green onions and sesame seeds before serving.

Tip: Keep the dressing separate until serving if you are making these bowls ahead.
