Ingredients
  

Skillet
  • 1 tbsp olive oil
  • 1 yellow onion diced
  • 1 lb ground turkey
  • 2 clove garlic minced
  • 2 tbsp taco seasoning
  • 1 chipotle pepper in adobo minced (use less for mild)
  • 1 can diced tomatoes 14.5 oz
  • 1 can black beans drained and rinsed (15 oz)
  • 1 cup corn thawed frozen or drained canned
  • 1 cup shredded cheddar cheese
To Finish
  • 1 lime cut into wedges
  • 2 tbsp cilantro chopped (optional)

Method
 

  1. Heat olive oil in a large skillet over medium heat. Add onion and cook 3–4 minutes until softened.
  2. Add ground turkey and cook until browned, breaking it up with a spoon, about 6–8 minutes.
  3. Stir in garlic, taco seasoning, and minced chipotle. Cook 30–60 seconds until fragrant.
  4. Add diced tomatoes, black beans, and corn. Simmer 5–7 minutes until slightly thickened.
  5. Sprinkle cheese over the top, cover, and cook 2 minutes until melted.
  6. Finish with a squeeze of lime and cilantro if using. Serve warm.

Notes

Tip: Start with half a chipotle pepper for mild heat, then add more to taste.
