Ingredients
  

Chicken Filling
  • 2 cups cooked chicken shredded or chopped
  • 1/3 cup plain Greek yogurt
  • 2 tablespoons mayonnaise
  • 1 tablespoon lemon juice
  • 1 teaspoon ranch seasoning
  • 1/4 teaspoon garlic powder
  • 1/3 cup grated Parmesan divided
  • 2 cups romaine lettuce chopped
For Serving
  • 4 pita breads halved
  • 1/2 cup croutons lightly crushed

Method
 

  1. In a bowl, stir together the Greek yogurt, mayonnaise, lemon juice, ranch seasoning, garlic powder, and half of the Parmesan.
  2. Add the cooked chicken and toss until evenly coated.
  3. Fold in the chopped romaine.
  4. Open the pita halves and fill each one with the chicken mixture.
  5. Top with crushed croutons and the remaining Parmesan. Serve immediately.

Notes

Tip: Keep the croutons separate until serving so they stay crunchy.
