Ingredients
  

Chickpea Smash
  • 1 15-oz can chickpeas drained and rinsed
  • 2 tbsp Greek yogurt or mayo
  • 1 tbsp lemon juice
  • 1 tbsp fresh dill chopped
  • 1/4 tsp garlic powder
  • 1/4 tsp kosher salt or to taste
  • 1/8 tsp black pepper
Sandwiches
  • 4 slices sandwich bread toasted if desired
  • 1/2 large cucumber thinly sliced
  • 1 cup greens lettuce or arugula

Equipment

Method
 

  1. Add chickpeas to a bowl and mash with a fork, leaving some texture.
  2. Stir in Greek yogurt, lemon juice, dill, garlic powder, salt, and pepper.
  3. Spread chickpea smash over bread. Add greens and cucumber slices.
  4. Close sandwiches, slice, and serve.

Notes

Tip: Pack cucumbers separately for lunchboxes so the sandwich stays crisp.
