Ingredients

Salmon bites
  • 1 1/4 lb salmon fillet, skin removed cut into 1-inch cubes
  • 1 tbsp olive oil
  • 1/2 tsp kosher salt
  • 1/2 tsp black pepper
  • 1 tsp garlic powder
Honey garlic glaze
  • 3 tbsp honey
  • 2 tbsp soy sauce or tamari
  • 1 tbsp rice vinegar
  • 2 tsp fresh garlic, minced
  • 1 tsp grated ginger optional
  • 1 tsp cornstarch optional, for thicker glaze
  • 2 tsp water if using cornstarch
To finish (optional)
  • 1 tbsp sesame seeds
  • 2 green onions, sliced

Equipment

  • Air fryer
  • Mixing bowl
  • Small saucepan (optional)

Method

  1. Preheat air fryer to 400°F for 3 minutes.
  2. Toss salmon cubes with olive oil, salt, pepper, and garlic powder.
  3. Arrange salmon in the air fryer basket in a single layer. Cook 7–9 minutes, shaking halfway, until just cooked through.
  4. Meanwhile, whisk honey, soy sauce, rice vinegar, garlic, and ginger in a bowl.
  5. Optional: For thicker glaze, simmer the sauce in a small saucepan and whisk in cornstarch + water slurry for 1–2 minutes.
  6. Toss hot salmon bites with the glaze until coated.
  7. Finish with sesame seeds and green onions. Serve right away.

Notes

Don’t overcook: Salmon bites cook fast—start checking at 7 minutes, especially if pieces are small.
Swap: Use maple syrup instead of honey, or add sriracha for spicy-sweet salmon.
Storage: Refrigerate up to 2 days. Reheat gently (air fryer 350°F for 2–3 minutes) to avoid drying out.
