Ingredients
  

Rice Pudding
  • 1 cup cooked rice cooled or leftover
  • 1 1/2 cups milk
  • 2 tbsp brown sugar or maple syrup
  • 1/2 tsp ground cinnamon
  • 1/4 tsp ground ginger
  • 1/8 tsp ground cardamom optional
  • 1 pinch kosher salt
  • 1 tsp vanilla extract

Method
 

  1. Add cooked rice, milk, brown sugar, cinnamon, ginger, cardamom (if using), and salt to a large microwave-safe bowl.
  2. Microwave for 3 minutes, then stir well.
  3. Microwave 2 minutes more and stir again.
  4. Microwave 1 to 2 minutes, until creamy and thickened. Let stand 1 minute.
  5. Stir in vanilla extract and serve warm or chill before serving.

Notes

Tip: Use a large bowl to prevent boil-over and stir between bursts for the creamiest texture.
