No-Bake Chocolate Peanut Butter Oat Bars

Easy no-bake bars with oats, peanut butter, and a chocolate topping. Minimal effort, big payoff.

Ingredients
  

Base
  • 2 cups rolled oats
  • 1/2 cup peanut butter creamy
  • 1/3 cup honey or maple syrup
  • 1 tsp vanilla extract
  • 1/8 tsp salt
Topping
  • 1 cup chocolate chips
  • 1 tbsp coconut oil optional, for smoother melt

Equipment

  • 8x8-inch pan
  • Parchment paper

Method
 

  1. Line an 8x8-inch pan with parchment paper.
  2. Mix oats, peanut butter, honey, vanilla, and salt until well combined. Press firmly into the pan.
  3. Melt chocolate chips (and coconut oil) in the microwave in 20-second bursts, stirring until smooth.
  4. Spread chocolate over the base. Chill 1 hour, then slice into bars.

Notes:
For extra crunch, mix in 2 tbsp chopped nuts or mini chocolate chips into the base.
