Method
- Line an 8x8-inch pan with parchment paper.
- Mix oats, peanut butter, honey, vanilla, and salt until well combined. Press firmly into the pan.
- Melt chocolate chips (and coconut oil) in the microwave in 20-second bursts, stirring until smooth.
- Spread chocolate over the base. Chill 1 hour, then slice into bars.

For extra crunch, mix in 2 tbsp chopped nuts or mini chocolate chips into the base.
