No-Bake Mocha Coconut Date Truffles

Ingredients
  

Truffles
  • 1 1/2 cups Medjool dates pitted
  • 3 tbsp unsweetened cocoa powder
  • 1 tsp instant espresso powder use less for mild mocha
  • 1 tsp vanilla extract
  • 1/8 tsp kosher salt
  • 1/2 cup shredded coconut plus more for rolling

Method
 

  1. Add dates to a food processor and pulse until broken down.
  2. Add cocoa powder, espresso powder, vanilla, and salt, then blend until the mixture clumps.
  3. Add shredded coconut and pulse to combine.
  4. Scoop and roll into small balls using slightly damp hands.
  5. Roll in extra coconut (or cocoa) and chill 20 minutes before serving.

Notes

Tip: If your dates are dry, soak them in warm water for 5 minutes, then drain well before blending.
