- Add pistachios to a food processor and pulse into a coarse crumb.
- Add dates, vanilla, salt, and cocoa (if using). Process until a sticky dough forms. Add 1 tsp water only if needed.
- Scoop and roll into 12–16 balls. Coat in crushed pistachios (or coconut/cocoa).
- Chill 15 minutes for best texture, then serve.
Notes
Dry dates? Soak in hot water 5 minutes, then drain well.
Storage: Refrigerate up to 7 days or freeze up to 2 months.
