Ingredients
  

Truffles
  • 1 cup pitted Medjool dates soft (soak if dry)
  • 3/4 cup pistachios shelled
  • 1 tsp vanilla extract
  • 1 pinch salt
  • 1 tbsp cocoa powder optional
  • 1 tsp water only if needed to blend
Coating
  • 2 tbsp crushed pistachios or coconut/cocoa

Equipment

  • Food processor
  • Measuring cups

Method
 

  1. Add pistachios to a food processor and pulse into a coarse crumb.
  2. Add dates, vanilla, salt, and cocoa (if using). Process until a sticky dough forms. Add 1 tsp water only if needed.
  3. Scoop and roll into 12–16 balls. Coat in crushed pistachios (or coconut/cocoa).
  4. Chill 15 minutes for best texture, then serve.

Notes

Dry dates? Soak in hot water 5 minutes, then drain well.
Storage: Refrigerate up to 7 days or freeze up to 2 months.
