Ingredients
  

Naan Pizzas
  • 4 mini naan breads
  • 1 teaspoon olive oil
  • 4 eggs
  • 6 ounces fully cooked breakfast sausage crumbled
  • 2 cups baby spinach
  • 1 cup shredded mozzarella cheese
  • 1/4 teaspoon black pepper
  • 2 tablespoons chives sliced

Method
 

  1. Preheat the oven to 425°F. Line a sheet pan with parchment paper.
  2. Place the naan on the pan and brush lightly with olive oil.
  3. Top each naan with sausage, spinach, and mozzarella, leaving a small open space in the center.
  4. Crack 1 egg into the center of each naan.
  5. Bake for 10 to 12 minutes, until the egg whites are set and the cheese is melted.
  6. Finish with black pepper and sliced chives before serving.

Notes

Tip: Bake a minute or two longer if you prefer firmer yolks.
