Method
- Preheat the oven to 425°F. Line a sheet pan with parchment paper.
- Place the naan on the pan and brush lightly with olive oil.
- Top each naan with sausage, spinach, and mozzarella, leaving a small open space in the center.
- Crack 1 egg into the center of each naan.
- Bake for 10 to 12 minutes, until the egg whites are set and the cheese is melted.
- Finish with black pepper and sliced chives before serving.
Notes
Tip: Bake a minute or two longer if you prefer firmer yolks.
