Ingredients
  

Oatmeal
  • 1 cup old-fashioned oats
  • 2 cups low-sodium chicken or vegetable broth
  • 1 cup cottage cheese
  • 2 tablespoons grated Parmesan
  • 1/4 teaspoon black pepper
Toppings
  • 2 eggs
  • 2 scallions thinly sliced
  • 2 teaspoons chili crisp or more to taste

Method
 

  1. Bring a small pot of water to a boil. Carefully add the eggs and cook for 7 minutes for jammy yolks. Transfer to cold water, then peel.
  2. In a saucepan, bring the broth to a gentle simmer. Stir in the oats and cook for 5 to 6 minutes, stirring often, until creamy.
  3. Lower the heat and stir in the cottage cheese, Parmesan, and black pepper until smooth and warm.
  4. Divide the oatmeal between 2 bowls.
  5. Halve the eggs and place them on top. Finish with scallions and chili crisp.

Notes

Tip: Add a splash of broth when reheating to bring the creamy texture back.
