- Bring a small pot of water to a boil. Carefully add the eggs and cook for 7 minutes for jammy yolks. Transfer to cold water, then peel.
- In a saucepan, bring the broth to a gentle simmer. Stir in the oats and cook for 5 to 6 minutes, stirring often, until creamy.
- Lower the heat and stir in the cottage cheese, Parmesan, and black pepper until smooth and warm.
- Divide the oatmeal between 2 bowls.
- Halve the eggs and place them on top. Finish with scallions and chili crisp.
