Soft baked breakfast sliders filled with fluffy eggs, ham, spinach, and Swiss cheese. A great make-ahead breakfast for busy mornings or brunch.

Ingredients
  

Sliders
  • 12 Hawaiian rolls
  • 8 large eggs
  • 2 tbsp milk
  • 1/2 tsp kosher salt
  • 1/4 tsp black pepper
  • 1 tbsp olive oil
  • 2 cups baby spinach roughly chopped
  • 8 oz ham chopped
  • 6 slices Swiss cheese
  • 2 tbsp Dijon mustard optional
  • 2 tbsp butter melted

Method
 

  1. Preheat the oven to 350°F and lightly grease a 9x13-inch baking dish.
  2. Whisk the eggs, milk, salt, and pepper in a bowl until smooth.
  3. Pour the eggs into a lightly oiled baking dish or lined pan and bake for 10 to 12 minutes, until just set.
  4. Meanwhile, warm the olive oil in a skillet and cook the spinach for 1 to 2 minutes until wilted.
  5. Slice the rolls in half as one slab and place the bottom half in the baking dish. Spread with Dijon if using.
  6. Layer on the baked egg, ham, spinach, and Swiss cheese. Add the top half of the rolls.
  7. Brush the tops with melted butter, cover loosely with foil, and bake for 12 minutes.
  8. Uncover and bake for 3 to 5 minutes more until the tops are lightly golden. Slice and serve warm.

Notes

Tip: Let the baked eggs cool for a minute before assembling so the sliders stay neat and easy to slice.
