- Preheat the oven to 350°F and lightly grease a 9x13-inch baking dish.
- Whisk the eggs, milk, salt, and pepper in a bowl until smooth.
- Pour the eggs into a lightly oiled baking dish or lined pan and bake for 10 to 12 minutes, until just set.
- Meanwhile, warm the olive oil in a skillet and cook the spinach for 1 to 2 minutes until wilted.
- Slice the rolls in half as one slab and place the bottom half in the baking dish. Spread with Dijon if using.
- Layer on the baked egg, ham, spinach, and Swiss cheese. Add the top half of the rolls.
- Brush the tops with melted butter, cover loosely with foil, and bake for 12 minutes.
- Uncover and bake for 3 to 5 minutes more until the tops are lightly golden. Slice and serve warm.
Notes
Tip: Let the baked eggs cool for a minute before assembling so the sliders stay neat and easy to slice.
