Method
- Cook soba noodles according to package directions, then rinse under cold water and drain well.
- Cook edamame according to package directions, then cool.
- Whisk soy sauce, lime juice, sesame oil, olive oil, ginger, and honey until combined.
- Toss noodles with edamame, cabbage, carrots, cucumber, and green onions in a large bowl.
- Pour dressing over the salad and toss until evenly coated.
- Top with sesame seeds and serve chilled or at room temperature.
Notes
Tip: Drain noodles very well before tossing so the dressing clings instead of getting watered down.
