Ingredients
  

Shrimp
  • 1 lb shrimp peeled and deveined
  • 1 tbsp olive oil
  • 1 tsp chili powder
  • 1/2 tsp kosher salt
  • 1 tbsp lime juice plus more to taste
Salad Cups
  • 1 large avocado diced
  • 1 cup cucumber diced
  • 1/2 cup cherry tomatoes halved
  • 2 tbsp cilantro chopped
  • 8 large lettuce leaves butter lettuce or romaine hearts

Method
 

  1. Toss shrimp with chili powder and salt.
  2. Heat olive oil in a skillet over medium-high heat and cook shrimp 2 to 3 minutes per side until pink and cooked through.
  3. Remove from heat and toss shrimp with lime juice.
  4. In a bowl, combine avocado, cucumber, tomatoes, and cilantro.
  5. Fill lettuce leaves with the avocado salad and top with shrimp. Add extra lime if desired.

Notes

Tip: Add avocado right before serving for the freshest color and texture.
